Chicken and Sausage in Red Gravy


INGREDIENTS

3 lbs bone in thighs

1 pkg Cajun Sausage - sliced

1 tbs oil

1 yellow onion – diced

1 bell pepper – diced

2 ribs celery

1 tbs minced garlic

2 tbs tomato paste

1 14.5 oz diced tomatoes

2 15 oz can tomato sauce

4 cups chicken broth

3 tbs Cajun seasoning

2 bay leaves

2 tsp sugar

2 tbs hot sauce - optional

 

 DIRECTIONS

Add your chicken to a blow

Season generously with Cajun seasoning

 

Heat a large Dutch oven over med high heat

Add oil to your pot

Once oil is hot add your sausage

Brown sausage for 10-15 minutes

Once browned remove and set aside

Add your chicken and sear on all sides

Once seared remove and set to the side

 

Add your onion, bell pepper and celery to the pot

Sauté until the vegetables are soft about 5-10 minutes

Add garlic and cook for about 1 minute

Add tomatoes paste and cook for 3-5 minutes

 

Add diced tomatoes, tomato sauce, sugar and bay leaf

Return the chicken, sausage and any drippings back to the pot

Add your chicken broth

Add hot sauce if desired this is optional

 

Bring to a boil then reduce to a low simmer

Cover and cook for 45-60 minutes, stirring occasionally

Taste gravy and adjust seasoning if needed

Cook uncovered if you want a thicker gravy

Remove bay leaves before serving

Serve over rice
