Camarones a la Diabla (Deviled Shrimp)
INGREDIENTS
2 lbs shrimp
1 tsp salt
1 tsp paprika
½ tsp pepper
2-3 Roma tomatoes
3 Chile guajillo
1 cup chiles de arbol (about 10-12 peppers)
3 garlic cloves
½ white onion sliced
1 tbs Olive oil
3 tbs Butter
DIRECTIONS
Place your cleaned shrimp in a bowl
Season with salt, pepper and paprika
Toss to coat the spices on the shrimp
Bring a pot of water to a boil
Add your tomatoes, guajillo and chiles de arbol
Boil for 5-7 minutes
Once the skin splits on the tomatoes turn off the heat
Cover and let sit for 10-15 minutes
Remove the skin from the tomatoes
Transfer tomatoes and chilies to a blender
Add garlic cloves and ½ cup of water
Blend until smooth
To a large skillet add oil and butter
Add shrimp, onions and the chili sauce
Add extra salt if needed
Cook covered for 10-15 minutes
Serve with rice and lime wedges
