Beef Pot Roast
Ingredients
2-3 lbs beef chuck roast
2 lbs med size potatoes
1 stake celery
1 lbs carrots
2 packages brown gravy
5 cups beef stock
Cajun seasoning
Oil
Directions
Season roast with Cajun seasoning all sides
Set oven to 350
Chops all veggies into med size pieces
Set to the side
Heat large Dutch oven over med heat
Add about 2-3 tbs oil
Once oil is hot
Add roast
Sear on all sides about 5 minutes
Once all sides are seared
Add 2 cups beef stock
Add lid to Dutch oven
Place in oven
Cook for 2 hrs
After 2 hrs
Add 2 more cups beef stock
Add veggies
Cover and cook another 2 hrs
Once roast is tender
Remove from oven
Add 2 package of gravy to a small bowl
Add 1 cup of beef stock
Mix to combine
Pour gravy into Dutch oven
Using a large spoon
Mix gravy with beef and veggies
Let sit for about 15 minutes for gravy to thicken
Server w/ mashed potatoes or rice
