Beef Fajita



Ingredients

Beef Skirt steak

Fajita Seasoning

Large Sweet Onion

Red Bell Pepper

Green Bell Pepper

Olive Oil

Tortillas




Directions

Season skirt steak with seasoning both sides

Place in Ziplock bag

Marinade 2 hrs to overnight in refrigerator


Remove steak from refrigerator

Place on large plate

Let come to room temperature


Prepare the following about an hour before cooking

Cut onion in half

Cut onion halves into slices

Place in large bowl

Drizzle with olive oil

Sprinkle seasoning on onion

Mix to evenly coat with seasoning


Remove stem and seeds from bell pepper

Cut in half

Cut bell pepper halves into slices

Place in large bowl

Drizzle with olive oil

Sprinkle seasoning on onion

Mix to evenly coat with seasoning


Turn your gas grill on high

*If you have a cast iron griddle place on one side of the grill*

Place steak on grill

Cook 5-7 minutes each side

Once cooked place in dish and cover


Placed Onions and bell pepper on grill or griddle

Cook for 5 minutes turning occasionally


Slice your fajita meat against the grain

Place in server dish


Place your tortilla on the group for 1m per side


Assemble your Fajita

Place meat in your tortilla

Add onions and bell pepper

Top with sour cream, guacamole and salsa
