Baked Chicken and Gravy


2 lbs Chicken – 4 thighs or  Breast

Cajun Seasoning

3 tbs Olive oil

2 white onions halved and sliced

2 bell peppers sliced

2 cups chicken broth

1 can cream of chicken soup



Preheat over to 350


Place chicken in bowl

Coat with Cajun seasoning

Add olive oil to skillet and heat over med high

Sear your chicken starting skin side down

Sear for 4 minutes per side

Place chicken in pan

Add sliced onion and bell pepper over chicken

Pour chicken broth in the pan

Cover pan with foil

Cook for 1 ½ hour


Pour your drippings into a bowl

Add cream of chicken soup

Wisk to combine till smooth

Pour gravy over chicken

Replace foil

Cook for an additional 30 minutes

Serve over rice
