Chicken and Sausage Gumbo


Ingredients:

1 cup oil

1 ½ Flour

2 - Med Onions

2 - Bell Peppers

4 - Celery Stalks

2 Cans Rotel

8 - 32oz Chicken Broth

5-6 lbs. Chicken (I use Thighs)

5-6 lbs. Andouille Sausage

2 Tbs Cajun Seasoning

Gumbo File

2 Tbs Hot sauce

1 package of cook Okra


Directions:

*Make your Roux*

Heat Large pot on Med High

Add Oil and heat till hot

whisk in flour till smooth

continue mixing the roux

Roux takes about 30 minutes

**cook till dark DO NOT STOP MIXING or it will burn**

**If you burn your roux you need to start over**


Once Roux is cooked


Add in your Veggies

Cook for about 5 minutes

Add in your Rotel

Cook for about 5 minutes


Add 5 containers of chicken broth

Add seasoning and hot sauce

Cook for 30 minutes


Add Sausage

Add another container of chicken broth

Cook for 30 minutes


Add chicken

Add another container of chicken broth

Skim off any oil that floats to the top

Cook for 1 hour


Add 1 package of cook Okra

Add another container of chicken broth

Cook for 1 hour


Add Gumbo File

Adjust seasoning if needed

Serve With Rice
