Chicken Soup

Chicken Noodle Soup



Ingredients

2-4 chicken breasts (depending on size)

16 cups chicken broth

4 Tbs olive oil

8 celery stalks (chopped into 1-inch pieces)

8 whole carrots (chopped into 1-inch pieces)

1 onion (diced)

½ Tsp thyme

2 Tsp minced garlic

1 Tsp salt

1 Tsp pepper

4 bay leaves

2 cups egg noodles

2 chicken bouillon cubes

8 cups water


Directions

Heat large pot of water

Add 2 chicken bouillon cubes

Once bowling

Add chicken breast

Cook till done 15-20 minutes


Remove chicken breast from water

Set to the side to cool

Once cool shred in to bite size pieces


Set chicken stock to the side


In large pot add olive oil

Once hot

Add carrots, celery, and onion

Cook for 5-10 minutes


Add chicken broth, **water, and seasonings

**I use the water the chicken was cooked in

Add shredded chicken

Bring to a boil

Add more water or stock as needed


Cook covered for 20-30 minutes

Once carrots are fork tender


Add pasta to pot

Lower to medium

Cover and cook for 10-15 minutes
