Cajun Pastalaya
Ingredients
1.5 lbs Andouille sausage
2 lbs boneless chicken thighs
¼ cup olive oil
½ cup butter
1 ½ cup diced celery
1 green bell pepper – diced
1 large onion – diced
3 tbs minced garlic
½ cup flour
4 cups chicken broth
2 cups water or milk
2-4 tbs Cajun seasoning
1 tsp pepper
1 16 oz pasta (noodles or spaghetti)
½ cup cream
Directions
Cut sausage and chicken into bit sized pieces
Add oil to large pot
Heat pot on medium
Once oil is hot add your sausage
Cook till brown about 5-10 minutes
Remove and set to the side
Season chicken with salt and pepper
Add to the pot and cook till brown
If needed add a bit more oil
Cook for about 5-10 minutes
Remove and set to the side
Reduce the heat
Add butter, celery, onion and bell pepper
Cook for about 10 minutes
Add garlic and cook for 2 minutes
Add flour and cook for 5 minutes
Add chicken broth, water, pepper and Cajun seasoning
Mix to combine
Raise heat to med high
Check to see if additional seasoning is needed
Cayenne or hot sauce can be added for extra heat
Once the broth come to a simmer
Add pasta, sausage, and chicken
*If using spaghetti break in half
Reduce to a simmer
Cover and cook for 10-15 minutes
Stirring occasionally
Do not over cook the pasta
Once pasta is done
Remove from heat
Let rest uncovered for 10 minutes
Add heavy cream and mix
